Hazelnut recipes for Nutella cookies and a decadent Hazelnut Cake

Nutella fans, you will LOVE the recipes I’m about to share with you!I just bought two super size jars of Nutella at Costco. Why? Because we are in the middle of a blizzard and Nutella keeps my family happy.  Nutella is delicious right out of the jar, just dripping off the end of your spoon.  Nutella is also great as an ingredient in a dessert.  These cookies are easy to put together and will be gobbled up in minutes, even if you are not stuck inside with three feet of snow all around your house.

Hazelnut Recipes – Nutella Cookies

I just bought two super size jars of Nutella at Costco. Why? Because we are in the middle of a blizzard and Nutella keeps my family happy.  Nutella is delicious right out of the jar, just dripping off the end of your spoon.  Nutella is also great as an ingredient in a dessert.  These cookies are easy to put together and will be gobbled up in minutes, even if you are not stuck inside with three feet of snow all around your house.

Ingredients

  • 1/2 cup salted butter, softened but not melted
  • 1/2 cup packed light brown sugar
  • 1/2 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract or vanilla paste (elevate your desserts with vanilla paste!)
  • 1/3 cup Nutella plus 1/4 cup Nutella
  • 2 and 1/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cornstarch
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • Glaze:
  • 1/2 cup chocolate chips
  • 1/4 cup Nutella
  • 1/4 cup coconut oil (heat up if not in liquid state)

Directions

  1. Preheat oven to 350F. Line two large baking sheets with parchment paper or silicone baking mats. Set aside.
  2. In a large bowl using a mixer, beat the butter for 1 minute on medium speed until completely smooth and creamy. Add the brown sugar and regular sugar and beat on medium high speed until fluffy and light in color. Beat in eggs and vanilla on high speed until combined. Scrape down the sides and bottom of the bowl as needed. Beat in 1/3 cup of Nutella until combined.
  3. Whisk the flour, cornstarch, baking soda and salt together in a large bowl. On low speed, slowly mix into the wet ingredients until combined. Add 1 cup of chocolate chips and mix in with a spoon.  Do not use a mixer, it will break up your chips. Stir in 1/4 cup more of Nutella. This last bit of Nutella should just be a streak in the dough, not completely mixed in. Do not overmix. 
  4. Scoop and roll balls of dough in your hands, use about 1 Tablespoon of dough for each cookie. The warmth of your hands will help them form a nice ball. Bake the cookies for 10-12 minutes, until slightly golden brown around the edges. The baked cookies will look soft in the centers when you remove them from the oven. Allow them to cool for 10 minutes on the cookie sheet. Do not move them early.  After the 10 minutes, you can carefully put them on a cooling rack to wait for their chocolate bath.
  5. After the cookies are done cooling, you can make your chocolate bath.  Do not make this too early as it will harden and then you need to start all over again.  Do not dip the cookies in the chocolate bath until they are completely cooled.  
  6. Melt 1/2 cup of chocolate chips in a double boiler or in the microwave carefully (watch that they do not burn or overmelt and get hard.)  When the chips are just melted stir in 1/4 cup of Nutella.  When just mixed, add in 1/4 cup of liquid coconut oil.  Stir till uniform.  Take each cookie, drop it into the chocolate bath and then let cool on some waxed paper or parchment paper upside down.  The chocolate should just stick to the cookie and then be taken out right away.  If you dip your cookie, then let cool upside down, your chocolate will not stick to the paper.
  7. Eat your cookie with a nice glass of milk. Enjoy!
