Breakfast Skillet Potatoes Recipe
This is one of those amazing breakfast dishes that disappears fast when you put it out on the table. I love making these Breakfast Skillet Potatoes on the weekends or when we host brunch at our house. They’re just so full of flavor and everybody raves about how delicious they are.
The key is having a cast iron skillet. My grandmother gave me ours several years ago and explained that any good southern cook must have a cast iron skillet and know how to use it. And you always take the advice of a southern lady who has served up hundreds of meals in her lifetime and won more than a few blue ribbons for her recipes.
Of course there are lots of things you can add to this recipe to make it your own style. My husband loves to scramble up his eggs and toss them in. I’ve added chorizo to make it a little spicier and give it a kick. Hey, whatever your heart (or stomache really) desires!
Breakfast Skillet Potatoes Recipe
Ingredients
- 1 bag (5 Pounds) Red Potatoes, Cut Into Chunks
- 4 cloves Garlic, Minced
- 1 large Onion Chopped
- 2 Green Bell Pepper, Chopped
- 2 Red Bell Peppers Chopped
- 1/4 cup Olive Oil
- 1 teaspoon Seasoned Salt
- 1/2 teaspoon Cayenne Pepper
- Kosher Salt and Ground Black Pepper
- Add Bacon or Sausage if you wish
Directions
- In a cast iron skillet cook up your bacon or sausage. Remove meat and set aside, leaving grease and oil from meat in skillet.
- Preheat oven to 400 degrees (F).
- Increase heat to medium-high and add olive oil and garli. Slowly add the diced potatoes to skillet. Cook till golden brown without stirring.
- Increase heat to high and onion, and bell peppers to the skillet. Stir enough to mix veggies and potatoes.
- Season with Cayenne Pepper, Seasoned Salt and continue to cook until veggies begin to soften.
- Stir in meat and allow to cook for one minute. Remove from heat.
- Place skillet in the oven and bake for 6 to 8 minutes till potatoes are crispy. Remove and serve.
